Makiko Taylor's Spinach Balls

     Spinach Balls

Ingredients:  

  • 6oz Stuffing Mix-----recommend Stove Top Monterey Style with Mushroom & Onion
  • 1-2/3 cups hot water ( I sometimes use canned broth instead)
  • 1/4 cup butter or margarine
  • 1 pkg (16oz) frozen CHOPPED spinach, thawed, WELL Drained and patted dry
  • 1/2 cup parmesan cheese
  • 1/2 cup any cheese you like ( I like to use cheddar and mozzarella or jalapeno pepper cheese for pizzazz!)
  • 1 cup chopped FRESH mushrooms
  • 1 small onion, finely chopped
  • 4 eggs
Instructions:
  1. Preheat oven to 400oF. Mix stuffing mix, hot water and butter in large bowl until blended.
  2. Add remaining ingredients; mix lightly. Shape into 60 balls using spoons.
  3. Place the balls in cookie sheet sprayed with cooking spray.
  4. Bake 15-20 mins or until lightly browned.
    ! caution ! Make sure you drain the spinach after thawed or you'll end up with not so appetizing looking balls!
Oven Settings:
    Bake at 400oF. Bake 15-20 minutes or until lightly browned.

Yield:
    Makes about 60 teaspoon-sized balls.
