- 6oz Stuffing Mix-----recommend Stove Top Monterey Style with Mushroom & Onion
- 1-2/3 cups hot water ( I sometimes use canned broth instead)
- 1/4 cup butter or margarine
- 1 pkg (16oz) frozen CHOPPED spinach, thawed, WELL Drained and patted dry
- 1/2 cup parmesan cheese
- 1/2 cup any cheese you like ( I like to use cheddar and mozzarella or jalapeno pepper cheese for pizzazz!)
- 1 cup chopped FRESH mushrooms
- 1 small onion, finely chopped
- 4 eggs

| Instructions: |
- Preheat oven to 400oF. Mix stuffing mix, hot water
and butter in large bowl until blended.
- Add remaining ingredients; mix lightly. Shape into 60 balls using spoons.
- Place the balls in cookie sheet sprayed with cooking spray.
- Bake 15-20 mins or until lightly browned.
! caution ! Make sure you drain the spinach after thawed or you'll end up with not
so appetizing looking balls!
