Elizabeth Milley's Spicy Rice.

     Spicy Rice

Ingredients:  

  • 1 1/2 c long grained rice (Basmati is very good)
  • 2 Tbsp oil
  • 1/4 c minced onion
  • 1-1/2 tsp minced garlic
  • 3/4 tsp ground coriander
  • 3/4 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/8 tsp ground pepper, black or white
  • 1 whole bay leaf
  • 1 tsp salt
  • 3 c water
Instructions:

    Rinse rice in fine colander or deep bowl until water runs clear. Let the rice drain. In medium saucepan with heavy bottom, heat oil over medium high heat. Saute onion and garlic 5-10 minutes until desired doneness, stirring constantly so garlic does not burn. Add all the ground spices and stir to coat onions, then add rice, water, bay leaf and salt and stir to combine. Bring to a boil. Once boiling, reduce heat and simmer until all liquid appears to be absorbed, about 10 minutes. Reduce heat to very low, place cover over the pan and cook. Stir frequently so the rice does not stick to the pan. Let cook for about another 15 minutes until the rice is tender.
