Elizabeth Milley's Low-fat Brownies.
Here's What's Cookin': 
    Low-fat Brownies

Ingredients:  

  • 2 oz unsweetened chocolate
  • 2 Tbsp + 2 tsp cooking oil
  • 2 Tbsp + 2 tsp baby food pureed prunes or prunes and apples
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 Tbsp granulated lecithin (available through King Arthur Flour Co.)
  • 2/3 c liquid egg substitute
  • 1 c sugar
  • 1/4 c all-purpose flour

Instructions:
    Melt the chocolate in the oil, then remove the pan from the heat. Stir in the pureed prunes and sugar. When well mixed, add the egg substitute and combine thoroughly. Stir in salt, baking powder, and lecithin, then add flour and mix well without over beating.
Oven Settings:
    Bake in preheated 350oF degree oven for 30 minutes. Let cool in pan ten minutes, then remove and peel off paper.
Serving Suggestions:
    Sprinkle with powdered sugar before serving.
Serves:
    12 servings.
Calories:
    150 calories per serving, about 33% of calories from fat.
