    Cranberry Bread

Ingredients:  

  • Mix Together:
    • 4 c whole wheat flour
    • 2 c sugar
    • 1 tsp baking soda
    • 3 tsp baking powder
    • 1 tsp or more of freshly grated orange peel
    • 1 tsp salt
  • Cut in:
    • 1 stick (1/2 c) butter or margarine
  • Combine and add to dry ingredients:
    • 2 eggs
    • 1-1/2 c orange juice
  • Fold in:
    • 2 c fresh cranberries (one 12 oz bag)
    • 1 c golden raisins
    • 1 c chopped dates
    • 1/2 c chopped dried apricots

Instructions:
    Divide into loaf pans (six mini loaves or two regular ones).
Oven Settings:
    Bake one hour at 350oF.
Serving Suggestions:
    Served sliced with butter. This bread is best while fresh from the oven, but it holds up to toasting for a warm snack any time.
