Deborah Mackall's Cornbread
Here's What's Cookin': 
     Cornbread

Ingredients:  

  • 1 c. cornmeal
  • 1 c. flour all or part wheat, whole, rye, oat rice, soy etc.
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 2-4 Tbsp melted butter
  • 1-4 Tbsp melted honey, or maple syrup, molasses or brown sugar [optional]
  • 1-2 eggs
  • 1 c. milk
Instructions:
    Combine dry and then wet ingredients. stir the two together until just combined. Do not over-beat. Pour into greased 8"x8" pan
Oven Settings:
    Bake at 400oF for about 20 minutes.
Serving Suggestions:
    Serve warm with butter. Often served with honey, it can also be served with molasses or maple syrup. This recipe goes with Deborah's Tamale Pie Recipe.
Serves:
    Makes 16 2"x2" pieces.
