Kimberlee Lewis' Caramel Corn.
Here's What's Cookin': 
     Caramel Corn

Ingredients:  

  • 7-8 quarts popped popcorn (microwave, air popper or stovetop)
  • 3 cups light brown sugar
  • 1/2 c light corn syrup
  • 1/4 c molasses
  • 1-1/2 teaspoons salt
  • 1-1/2 cups butter
  • 3/4 teaspoons baking soda
  • 1-1/2 teaspoons vanilla extract
Instructions:

  1. Spray oil coating onto two deep pans, such as a roasting pan or lasagna dish.
  2. Place popped popcorn into deep pans and set aside.
  3. Preheat oven 200oF.
  4. In a saucepan combine brown sugar, corn syrup, molasses, salt and butter. Bring to a boil over medium heat while stirring.
  5. Once it starts to boil, stop mixing and wait until mixture reaches 250oF.
  6. Remove mixture from heat. Stir baking soda and vanilla into mixture.
  7. Pour mixture over popped popcorn. Don't worry about totally coating it. Place pans in oven.
  8. Stir popcorn every 15 minutes for 45 minutes. (3 rotations) First stir will coat popcorn.
  9. Remove from oven after the third stir and break apart as it cools.


Oven Settings:
    200oF.
Serving Suggestions:
    For handy snacks these can be shaped into balls and wrapped in plastic wrap.
Yield:
    Approx. 7-8 quarts of caramel corn
